Preparation time: 40 minutes
Ingredients:
• 250 gms unsweetened khoya
• 3 tbsp maida
• 350 gms sugar
• Few drops of rose water/ rose essence
• ¼ tsp baking soda
• ¼ tsp cardamom powder
• Oil / ghee for frying
Method:
Add 250 ml water to the sugar and boil by stirring.
Stir the sugar syrup to 1 string consistency.
Add few drops of rose essence and cardamom to the syrup and keep it aside
Take khoya into a big plate and soften it with palm without any lumps
Add maida and blend well with khoya to make proper dough and cover it with a wet cloth.
Heat oil in a wok on a low flame.
Make the dough into 4 portions and add a pinch of baking soda to 1 portion and mix well.
Make 6-8 equal sized round balls without any cracks.
Fry them in oil until they turn brown.
Take out the jamuns from the oil and dip in the sugar syrup.
Repeat the same with the remaining dough.
After the jamuns absorb the sugar syrup, shift into a plate and serve.
